Ginjudu (Ginjda)

Brief: Uttarakhand traditional dish prepared from Pahari Bhatt Dal (Black Beans) and Jhangora (Barnyard Millet). Also locally regarded as Pahadi Khichdi which is nutritious and healthy.

Ingredients

  1. Bhatt Dal – 1 cup
  2. Jhangora – 1 cup
  3. Cumin seeds – ½ Tea Spoon
  4. Tumeric powder – 1 Tea Spoon
  5. Coriander powder – 2 Tea Spoon
  6. Red Chilli powder – 1 Tea Spoon
  7. Oil – 50 gms
  8. Salt to taste

Method

  1. Grind the Bhatt in thick pieces
  2. Wash Jhangora and soak
  3. Fry cumin seeds till it crakes then add tumeric powder
  4. Add Bhatt pieces and Jhangora with Coriander & Chilli powder and Salt.
  5. Cook on slow fire
